A quick, 4-ingredient avocado sauce coupled with cheesy tortellini & a front door delivered fresh, wild-caught sockeye salmon will elevate your dish without even trying.

Ingredients
1 ½ - 2 ripe avocados
½ lemon, squeezed
1 bunch fresh cilantro or basil (today, cilantro)
2 garlic cloves
Salt and pepper to taste
4-6 oz. pasta (I used cheese tortellini)
1 tablespoon butter or extra-virgin olive oil (EVOO)

2 salmon filets
Avocado sauce (see above)
Roasted asparagus
Salt and pepper to taste

Directions
Make the Avocado Sauce
Blend all ingredients in a food processor.
As an optional step, add ¼ cup of milk and blend to create a creamy sauce.
Set avocado sauce aside.
Make the Pan-Seared Salmon and Pasta
Cook pasta according to directions, drain and set aside.
Heat the butter or EVOO in a frying pan over medium heat. When pan is hot, sear the salmon, about 2-3 minutes on each side, until a nice sear is achieved like in the picture above.
Add avocado sauce to a sauce pan, season well with salt and pepper and toss in pasta.
Arrange pasta and salmon on a plate, add roasted asparagus.
