Cajun Shrimp

This 5 minute meal from @pennysprimal is a delicious, easy weeknight meal the entire family will enjoy. Pair our wild-caught shrimp with cauliflower rice and some steamed veggies for a healthy meal.

Ingredients

1 lb shrimp, cleaned and tails removed
- 2 Tbsp cajun spice
- 2 Tbsp olive oil
- 1 lime, cut in wedges
- Fresh cilantro, chopped
- 1 bag frozen cauliflower rice
- 5 oz fresh spinach
- 2 Tbsp ghee
- 1/2 cup chicken broth
- 1/2 tsp salt
Directions
In medium saucepan, melt ghee.
Add cauliflower rice, cook 5 minutes.
Add chicken broth, salt and spinach.
Stir and cook until spinach is wilted.
Meanwhile, heat oil in saute pan over medium heat.
Add spice, stirring constantly for 30 seconds.
Add shrimp, stirring to coat with spice.
Cook 2 minutes per side.
Serve over cauliflower spinach.
Garnish with lime wedges and cilantro.
Enjoy!
