Chicken Fajita Stuffed Potatoes
Chicken Fajita Stuffed Potatoes are just what you need for your Taco Tuesday or any day of the week! - 4-6 Russet potatoes, roasted
1 lb ground chicken
- 3 tbsp fajita spice
- 3 bell peppers, seeded & sliced
- 1 large onion, sliced
- 1 tbsp avocado oil
- 1/2 bunch cilantro, chopped
- limes for garnish
In large saute pan, heat oil.
Add peppers and onions and saute till tender. Move to plate.
Add chicken and spice, and cook until no longer pink.
Add peppers and onions back to pan, stirring to combine.
Add cilantro and stir in.
Spoon mixture over hot baked potatoes.
Garnish with limes and more cilantro, if desired.
