Chipotle Chicken Tacos
Easy, simple, and a delicious household favorite by @joyfulhealthyeats. These tacos are full of fun, fresh summer flavors and spices that you can whip up in just a few minutes.
1 lb boneless skinless chicken breast
1 Tbsp Smoky Chipotle Seasoning
1 Tbsp avocado oil
1 cup diced fresh pineapple
1/3 cup finely diced red pepper
1/4 cup finely diced red onion
1/4 cup chopped cilantro
1.5 Tbsp finely diced jalapeno
1 garlic clove, minced
1 Tbsp lime juice
Salt, to season
1/4 cup crumbled queso fresco
1 avocado, sliced
10 tortilla or lettuce wraps
Smoky Chipotle Chicken
For the Pineapple Salsa
To a medium bowl, add pineapple, red pepper, red onion, cilantro, jalapeno, garlic, lime juice, and salt. Using a spoon, mix everything together and set aside.
Smoke Chipotle Chicken
Preheat a grill to medium high heat, approximately 375-400 degrees F.
To a small bowl, add 1 Tbsp of Smoky Chipotle Seasoning (get recipe here) and avocado oil. Stir together.
Rub seasoning on chicken breast.
Rub grill grates down with oil or spray with cooking spray. Place seasoned chicken breasts on grill. Grill each side for 4-6 minutes depending on the thickness.
Remove from grill and let sit for 5 minutes. Chop up and set aside.
To each tortilla or lettuce wrap, add 1/3 cup of chopped chicken, 1/4 cup pineapple salsa, 1 Tbsp of queso fresco and a couple avocado slices.
