Greensbury's organic baby back ribs are perfect with our very own smokey dry rub recipe. Seal the deal by lathering it in some True Made Foods BBQ sauce.
Remove ribs from freezer and thaw in refrigerator for 24 hours.
Mix together ingredients for the rub in a small bowl (if made in advance, store at room temperature in an airtight container).
Once ribs have thawed, remove from packaging and dry with paper towels.
Rub each rack thoroughly on all sides with the rub mixture. Place ribs in a large airtight container and store in the refrigerator for 1-24 hours (container should be large enough for ribs to lay side-by-side and not stacked on top of each other).
When ready to grill, remove the ribs from the refrigerator and allow to come to room temperature while heating up the grill.
Grilling Instructions (for gas grill)
Heat grill to 300 degrees using only one of the burners.
Once the grill is at 300 degrees, place ribs bone side down on the side of the grill away from the lit burner. The placement is important because the idea is to cook the ribs with indirect heat. If they're placed directly over the burner then the ribs may overcook and become dry.
Close the lid and let the ribs cook for 30 minutes. Make sure the temperature returns to 300 degrees and stays at that temperature the entire time. It's important to not open the lid!
After 30 minutes, check the ribs to make sure they are browned on all sides. If they still appear raw, close the lid and let cook for another 10 minutes.
Once the ribs are ready, take each rack and place on a piece of aluminum foil. Pour enough apple juice over the ribs to lightly coat them and have a small pool at the bottom of the foil. We suggest folding up the edges of the foil to form a boat, so that the apple juice doesn't run off the sides.
Wrap the ribs, with the apple juice, tightly in the foil to create an airtight pouch. It is important to make sure the pouch is completely sealed and airtight with no leaks because the apple juice is going to steam the ribs in the next step.
Put the foil-wrapped ribs back on the grill (in the same place as before). Close the lid and increase the temperature to 375 degrees. If you have to turn on another burner to hit 375 degrees make sure that the ribs are not directly over the flame. Leave the ribs on the grill for 30 minutes.
Saucing the ribs
Pour most of the True Made Foods BBQ sauce into a bowl. Keep the remaining sauce off to the side in a separate bowl to serve with the finished ribs.
Once the 30 minutes of cooking the ribs at 375 degrees is complete, open the lid, unwrap the ribs, and return them to same spot on the grill.
Using a BBQ or basting brush, coat the top side of each rack of ribs thoroughly with BBQ sauce.
Close the lid and turn down the grill temperature to 250-260 degrees.
After 5 minutes, open the lid, flip the ribs and coat the other side in BBQ sauce. Close the lid for another 5 minutes.
Continue flipping and saucing every 5 minutes until you have at least two coats on each side, though preferably the ribs are coated 3-4 times.
Once you're done saucing, take the ribs off the grill and serve with the reserved BBQ sauce on the side.
