Ingredients
-
3 6oz. wild caught Alaskan sockeye salmon filets
1/4 cup soy sauce
4 Tbsp. brown sugar
2 cups basmati rice
Directions
Cook the rice as directed.
Preheat oven to 350°F.
Combine the soy sauce, and brown sugar in a shallow dish then cut the salmon into chunks. Toss the salmon in the sauce before setting aside for a couple of minutes.
Place the salmon chunks on a sheet tray lined with baking paper. Cook the salmon in the oven for 6 minutes, or until they are caramelized and cooked inside.
While the salmon cooks, reduce the marinade in a saucepan for 1 minute.
Serve salmon over rice, spoon remaining marinade over the dish and serve with a wedge of lime if desired.
