Citrus and summertime go hand-in-hand. And this simply lemony chicken marinade is sure to satisfy your summer flavor craving. Simply mix it up and marinate your chicken breast for a refreshing and pleasing dish!

Ingredients

4 organic, skinless, boneless chicken breasts *
1/4 cup olive oil
1 Tbsp. jarred minced garlic
Juice from 1/2 lemon
1/2 Tbsp. fresh thyme
1/4 tsp. crushed red pepper
Pinch of salt and pepper
Directions
Mix all the marinade ingredients together in a small to medium sized bowl.
Place the chicken breast in a sealable container or gallon sized Ziploc bag and pour in the marinade. Place in the refrigerator for at least 2 hours making sure to flip a couple of times so that all sides of the chicken breast get thoroughly coated.
When ready to cook, preheat your grill to about 350°F. While the grill is heating, remove the chicken from the refrigerator and let sit on the counter so that it begins to come up to room temperature.
When the grill is at temperature, remove the chicken breast from the marinade, shake off any excess, and place the chicken breast on the grill.
Cook for about 5 minutes, then flip and cook for another 5 minutes. Check the internal temperature of the chicken breast and if 165°F, then remove from the grill. If the chicken isn't up to 165°F, then flip and cook for another 4-5 minutes, check the internal temperature again and remove from the grill when it's 165°F.
Recipe Note
* This recipe works just as well with chicken thighs. Though chicken thighs are usually thinner than chicken breast so just reduce your cooking times by about a minute per side and cook to the same internal temperature of 165°F.
