Grilled Sausage and Veggies

Get your grill out and recreate this recipe by @thetipsybite. It's easy to make, full of flavor, and quick for weeknight meals!

Ingredients

2 packages (8 links) smoked andouille chicken sausage, coined
1 lb. baby potatoes, chopped into 1 inch pieces
2 yellow or green zucchini squash, coined
1/2 onion, sliced thinly
1 orange/red bell pepper, chopped asparagus (optional)
1 can of corn kernels (rinsed and drained) or roughly chop 3-4 corn on the cob into 1 inch pieces
1/2 cup olive oil
1 Tbsp oregano
1 Tbsp parsley
1 tsp cayenne
1 Tbsp smoked paprika
1 tsp garlic powder
salt and pepper, to taste
1-2 Tbsp of fresh chopped parsley or basil
Directions
Sheet Pan Method
Prep your sausage and potatoes, throw them together in one bowl. Prep your veggies, set aside (The sausage and potatoes have a longer cook time)
Whisk the olive oil with the spices until combined and pour onto the sausage/potato mixture
Spread the sausage/mixture onto a sheet that is lined with foil
Bake for 30-35 minutes until the potatoes are fork tender. At this time, add your veggies (zucchini, onions, corn, peppers, asparagus, etc.) Toss to combine. Bake for another 5-7 minutes.
Top with a little chopped parsley or basil and enjoy!
Grill Method
Heat your grill to desired temperature
Prep your sausage and potatoes, throw them together in one bowl. Prep your veggies, set aside (Sausage and potatoes have a longer cook time)
Whisk the olive oil with the spices until combined and pour onto the sausage/potato mixture
On a sheet of foil, add your sausage/potato mixture onto the grill and cook until the potatoes are fork tender, mixing as needed so it doesn't burn. Add your veggies and grill for another few minutes.
Top with a little chopped parsley or basil and enjoy!
Recipe Note
*You can play around with the spices if you’d like- sometimes I sprinkle a little cumin to the mixture, or I add more cayenne for the heat (optional). This recipe is super versatile!
*I normally use canned corn kernels because it’s easier, so feel free to pick what works for you
*This is a perfect meal prep meal, store in an airtight container in the fridge for up to 5 days.
