Lettuce Wrap Fish Tacos

Fish tacos are a favorite for many families and these lettuce wrapped fish tacos are not only healthy and delicious, but you can have them on the table in less than 15 minutes. Just don't forget to serve with extra napkins in case things get a little messy!

Ingredients

2 6oz. wild caught cod filets
Your favorite taco seasoning (we recommend Siete)
2 Tbsp. olive oil or avocado oil
8 leafs of romaine lettuce
Shredded carrots
Shredded purple cabbage
1 ripe nectarine (diced)
1 ripe avocado (sliced)
Your favorite salsa
1 fresh lime (cut in quarters)
1 jalapeño (sliced)
Directions
Prep all the fruit, veggies and romaine.
Cut cod into strips and season on all sides with taco seasoning.
In a large skillet, heat oil over medium-high heat.
Carefully place fish in hot skillet and cook for about 1-2 minutes per side, until fish starts to brown and become flaky.
Using each piece of romaine as the taco shells, add to each leaf the carrots, cabbage, avocado and nectarine. The add the fish, salsa, jalapenos and squeeze a little lime on top.
Recipe Note
If you're wondering about including fruit in your fish tacos, give it a try and you'll be wondering why you didn't do it sooner! You can always substitute in mangos if nectarines aren't available or in season.
