Olive Bar Fish Dinner

This wild-caught cod or halibut sheet pan dinner by The Modern Proper is an easy recipe to use during your busy week.

Ingredients
- 10-12 New potatoes, (or other waxy potato) cut into quarters
- 1 tbsp Olive oil
- 1 tsp Kosher salt, divided

1.5 lbs white fish such as cod or halibut, cut into 6 pieces
1 Small red onion, cut lengthwise into 8 wedges
- 2 cups Olive bar offerings (peppers, olives, roasted garlic, marinated artichoke hearts etc.)
- ½ tsp Pepper
- 1 tsp Onion powder
- 1 Lemon
Directions
Heat oven to 400° F. Cut up onion and potatoes.
Spread the potatoes onto a large rimmed baking sheet. Drizzle with olive oil and ½ teaspoon salt. Toss to coat. Cook on the center rack for 10 minutes.
Remove potatoes from the oven. Add olive bar offerings and toss with potatoes. Nestle in fish filets and season with pepper, onion powder and remaining ½ tsp of salt.
Bake on the center rack until the fish is opaque and flakes with a fork. If you would like the meat and veggies to have a bit of char, broil for 3 minutes or until desired crispiness is achieved.
Squeeze lemon juice over the finished sheet pan and serve
