4-6 pieces Organic Applewood Smoked Bacon (diced)
1 1/2lbs Organic Free-Range Chicken Thighs
1 Tbsp Italian seasoning
1/2 onion (diced)
6 garlic cloves (minced)
1 cup milk (or heavy cream)
Salt (to taste)
Fresh ground black pepper (to taste)
2 Tbsp fresh parsley (chopped, for garnish)
6 cups fresh spinach
2 cups cooked rice
3-4 cups cooked egg noodles
For the Cream Sauce
Heat a large skillet (preferably cast iron) over medium heat. Cook diced bacon until crispy--about 5 minutes.
When cooked, set bacon aside on a paper towel lined plate.
Drain off most of the bacon grease from the skillet.
Place chicken thighs in the hot skillet and season with about half of the Italian seasoning. Cook for 5-6 minutes.
Flip chicken thighs, season with remaining Italian seasoning and cook for another 5-6 minutes--until chicken is completely cooked (around 165 degrees on your instant read thermometer)
When fully cooked, remove chicken thighs and set aside with the bacon.
In the same skillet, cook the diced onions for about 3-4 minutes, stirring occasionally.
To the onions, add the milk, garlic, salt and pepper. Stir thoroughly.
Turn heat to low and add chicken and bacon. Simmer for about 5 minutes. Occasionally lightly stir the sauce and baste the chicken with sauce to ensure all the flavors are fully combined.
Serve over a bed of rice, noodles, spinach or with a side of roasted broccoli.
Pour extra sauce over the chicken.
Garnish with fresh parsley.
