Orange Chicken Meatballs

This family-pleaser from Whole30 Certified Coach Hayley Lucero (@realfoodwithaltitude) uses ingredients you probably already have in our kitchen and can be made in the air fryer or in the oven. We love pairing them with rice and fresh vegetables, but the meatballs themselves are Whole30 and Paleo compliant so just choose your sides based on your dietary needs.

Ingredients

1 lbs ground chicken
1 egg
1 tsp. ginger powder (if you have fresh ginger, then 2 tsp minced)
1 tsp. garlic powder (if you have fresh garlic, then 2 tsp minced)
1 tsp. coconut aminos (optional)
1/4 cup coconut aminos (optional)
Fresh squeezed juice from 1/2 an orange
2 Tbsp. water
1 Tbsp. rice wine vinegar
1 tsp. sesame oil
1 tsp. ginger powder (if you have fresh ginger, then 2 tsp minced)
1 tsp. garlic powder (if you have fresh garlic, then 2 tsp minced)
1/2 tsp. sriracha
1/4 tsp. arrowroot powder
Salt & pepper (to taste)

Directions
Combine all meatball ingredients into a large mixing bowl. Mix gently until thoroughly combined. Be careful not to mix too much because it can make the meatballs dry.
Spray the bottom of the air fryer (otherwise they will stick)!. Use a small scoop, melon baller, or meat baller to make 1 inch diameter meatballs--1 pound of ground chicken typically makes about 20 meatballs.
Place the meatballs in an air fryer with about an inch in between each (you may have to do a couple of rounds depending on the size of your air fryer). Cook on 375°F for about 10 minutes, making sure to flip halfway through.
If you are not using an air fryer, cook the meatballs in the oven at 375°F degrees for about 20 minutes.
While the meatballs are cooking, combine all of the sauce ingredients into a pan and whisk until smooth. Place the pan on the stove over low heat and let simmer for 8-10 minutes until the sauce thickens.
When the meatballs are done, put them in the pan with the sauce and coat thoroughly with the sauce.
Serve over your favorite rice and veggies and top with excess sauce. Enjoy!
