Organic Bacon & Sausage Breakfast Strata

Directions

1. Preheat oven to 375º. Butter 9x13" or other large baking dish.

2. Place bread cubes on large baking sheet and toast in oven for 15 min.

3. While bread it toasting, slice bacon into 1" pieces and cook in large cast iron skillet over medium-high heat until crisped up, about 15 minutes. Remove bacon with slotted spoon.

4. Remove bread from oven and set aside to cool. Leave oven on.

5. Add sausage links to pan and brown on all sides, about 10 min. Remove from pan and slice into 1/4" pieces.

6. Clean pan and place back on stovetop.

7. Heat 2 Tbsp olive oil over medium heat. Add onion to pan, season with salt and pepper and cook, stirring occasionally, until softened and starting to caramelize, about 10 minutes.

8. Add greens and continue cooking until wilted. Add sausage slices, stir to combine and cook an additional 3 minutes. Remove pan from heat and set aside.

9. In a large bowl, whisk 6 eggs, heavy cream, salt and pepper until beaten and combined.

10. Place a layer of bread cubes in baking dish. Top with half of the onion-greens-sausage mix. Add a layer of bacon and grated cheese. Repeat with another layer of bread cubes, mixture, bacon and cheese. Pour egg mixture evenly over strata.
