Our Favorite Chicken Salad Recipe for Spring

It’s important to have a go-to meal that meets your nutritional needs — but also tastes great. That’s why we love this chicken salad recipe: it’s so easy to make, refreshing and allows you to hit all your macros. Plus, the spinach and almonds help satisfy your cravings for crunch, while the grapes and cranberries give you a little hint of sweetness. When you’re meal prepping, just be sure to keep the chicken salad separate from the bread until you’re ready to eat — try toasting your bread too. Feel free to experiment with different seasonings, such as adding a tablespoon of dill to your yogurt mixture.
2 cups, roasted chicken
1/2 cup diced red onions
1/2 cup diced apples
1/2 cup grapes, halved
1/4 cup dried cranberries
1/2 cup alomnd slivers
1/2 cup plain Greek yogurt
1 tbsp. freshly squeezed lemon juice (or more, to taste)
1/2 tsp. garlic powder
Kosher salt and freshly ground black pepper
8-10 slices of bread
4-5 spinach leaves
In a large bowl combine chicken, red onions, apples, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, and salt and pepper (to taste);
Serve sandwiches on bread with chicken mixture and spinach;
