Paleo "Pasta" Fagioli

Pasta Fagioli is one of those all-time great comfort foods--especially in those colder months! This recipe from Hayley Lucero (@realfoodwithaltitude) is gluten-free and bean-free but is still super hearty.

Ingredients

1 pound organic ground turkey (or substitute other ground meat if you prefer)
2 large carrots (diced)
2 celery sticks (diced)
1/2 white onion (diced)
1 white sweet potato (diced)
1 cup cauliflower rice
1 8oz. can tomato sauce
1 4oz. can tomato paste

1 quart chicken broth
2 cups water
1 Tbsp. garlic (minced)
1 tsp. thyme
1 tsp. basil
1 tsp. basil
1 tsp. oregano
1/2 tsp. marjoram
1 Tbsp. Italian seasoning
1/2 tsp. red pepper flakes
Salt and pepper (to taste)
Directions
Heat a large pot to medium-high heat with 1 Tbsp. olive oil. Add the ground turkey, Italian seasoning, and red pepper flakes to the pan. Cook for about 10 minutes or until the turkey is brown.
Add onion, carrots, celery, and garlic to the pan and sauté for 2 minutes. Then add the rest of the seasonings to mix and sauté for another 5 minutes.
Add tomato sauce, tomato paste, chicken broth, water, potatoes, and cauliflower rice to the pot. Bring the soup to a boil and let it simmer for about 25 minutes or until the potatoes are fork-tender.
Serve and enjoy!
Recipe Note
If you can't find white sweet potatoes, any type of potato will still work fine. Also don't be afraid to add beans or lentils.
Craving a more traditional preparation with pasta? Then go for it! Just cut the amount of potatoes in half.
