Pistachio Crusted Salmon

  • 2 salmon fillets
  • 1 tbs dijon mustard
  • 2 tbs almond meal
  • 1/4 cup chopped pistachios
  • 3 tbs lemon juice
  • 1 tbs stevia


  1. Preheat oven to 360 F
  2. In a bowl, combine almond meal, lemon juice, stevia and mustard
  3. Evenly spoon mixture on top of each salmon fillet Spread chopped pistachios on top
  4. Bake for 15 minutes
