Pork and Asparagus Larb

Did you know a Larb is a type of Lao meat salad that is the national dish of Laos? Take a trip around the world for dinner and try this flavorful and nutritious recipe courtesy of Greensbury Ambassador Eugene Feygin (@feyginfoto).

Ingredients
- 3 tsp. Extra virgin olive oil
2 lb. asparagus, sliced
-
8 oz. ground pork
6 scallions, diced
2 shallots, diced
5 garlic cloves, minced
2" piece ginger, minced
- 2 Tbsp. Shaoxing wine
- 1 Tbsp fish sauce
- 2 Tbsp. soy sauce
1 tsp. toasted sesame oil
Directions
Warm olive oil over medium heat and add shallots. Cook for several minutes until scallions are clear, but not browned.
Add garlic and ginger and cook for 1 minutes.
Add ground pork and cook until browned, about 5 minutes.
Add asparagus, scallions, wine and sauces to pork and cook until asparagus is softened, about 3 minutes.
Serve warm over rice and enjoy!
