Pork Loin and Roasted Sweet Potatoes

This herb coated pork loin with roasted sweet potatoes from @feyginfoto is the perfect dish to make for friends and family.

Ingredients
- 2 tbsp extra virgin olive oil
- 1 tbsp sea salt and fresh cracked pepper

2 lb pork tenderloin
- 4 tbsp butter
- 2 tbsp crushed garlic
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp dried sage
- 3 large sweet potatoes
- 1 cup spinach
- 1-2 small cooked beets
- 2 oz Honey goat cheese from @laurachenel
- 1 oz candied pecans
- 1 tbsp aged balsamic
Directions
Preheat oven to 350 degrees.
In a small bowl, combine all herb spices.
Season meat with salt.
In a large pan add oil and sear pork tenderloin on all sides (3-4 min per side).
Transfer to baking sheet.
Generously coat with herb mix.
Wrap in foil, bake until meat is 145 degrees internally at the widest, thickest part of the tenderloin.
Slice against the grain and serve immediately.
Dice sweet potato into small pieces and bake on a baking sheet at 350 for 20 min or until soft.
Toss all ingredients in salad and serve with the pork!
