Slow Cooker Chicken and Veggies
This recipe from Kelley Kolinske combines two of our favorites--the slow cooker and chicken thighs! The "set it and forget" aspect of the slow cooker is perfect for busy households and chicken thighs are always delicious.
4 8oz. Organic boneless, skinless chicken thighs
2 Heads of broccoli cut into florets
2 Medium-sized sweet potatoes (about 2 1/2 lbs) cut into 1/2 inch cubes
3/4 tsp. rosemary
1 tsp. garlic salt
Sea salt (to taste)
Add chicken and sweet potatoes to slow cooker and season with rosemary, garlic salt and sea salt. Cook on high heat for 4 hours.
Add in broccoli florets and cook for another hour.
Serve and enjoy!
