Sweet and Sour Meatballs
Meatballs are always a family favorite and these sweet and sour meatballs have just the right flavor combinations that kids love. Whole30 Certified Coach Hayley Lucero (@realfoodwithaltitude) uses ground turkey to make them healthier!
1 lbs. Organic ground turkey
1 tsp. Garlic powder
Salt and pepper (to taste)
1 cup Fresh pineapple cubes
3 tbsp. Coconut aminos
1 tbsp. Rice wine vinegar
2 tbsp. Ketchup
1 tbsp. Garlic (minced)
1 tsp. Ginger powder
1 tsp. salt and pepper
¼ cup Water (as needed)
For the Meatballs
For the Sweet & Sour Sauce
Combine the meatball ingredients (turkey, egg, garlic powder, salt, and pepper) in a bowl and mix until combined. If you are cooking these in the oven, pre-heat the oven to 400°F.
Spray your sheet pan or air fryer with your favorite nonstick spray. Scoop 1-2 inch meatballs on to the tray/pan.
Pro Tip: A small ice cream scoop makes perfect sized meatballs.
Once all the meatballs are on the tray, stick them in the oven or air fryer. For the air fryer, cook on 375° for about 12 minutes. If you cooking in the oven, cook for about 25 minutes or until meatballs reach an internal temp of 165° F.
For the Sweet and Sour sauce, add all the ingredients into a food processor or blender. Mix until smooth. Add water as needed in 1 tbsp. increments to thin out the sauce.
In a pan that is heated to medium heat, add the Sweet and Sour sauce, diced red pepper and diced pineapple. Simmer for about 10 minutes.
When the meatballs are done, add them to the pan with the sauce and simmer for another 5 minutes.
Top with green onion and serve over cauliflower rice.
