This Walnut Crusted Salmon offers wonderful crunch from the walnuts along with subtle, yet complex flavors from the dill and dijon. While all seafood lovers will want to give this recipe a try, it's also perfect for introducing salmon to those picky eaters at your table!

Ingredients

2 Atlantic salmon filets
1 cup walnuts
1 Tbsp. avocado oil
1/2 lemon (juiced)
1 Tbsp. Dijon mustard
1 Tbsp. garlic
1 tsp. dill
Salt & pepper
Directions
Preheat oven to 400°F.
Combine walnuts, avocado oil, lemon juice, dijon mustard, garlic, dill, salt and pepper into your food processor. Pulse until the texture of walnuts is finely chopped--not quite a paste, but it should stick together.
Place salmon on a sheet pan covered with foil that is coated in non-stick spray. Put a small amount of avocado oil and salt/pepper on your salmon. Then put your walnut mixture on top of your salmon (half on one fillet and half on the other).
Cook in the oven for 18 minutes or until salmon is cooked through to an internal temperature of 145°F. Keep in mind everyone's oven is different so it may need another minute or two.
Recipe Note
- If you are not doing a Whole30 and want a little extra sweetness, add a teaspoon of honey;
- If you are cooking for a family, just double the crust recipe;
- Asparagus is great as a side, but also goes great on quinoa, rice, or even on a salad;
