Whipped Mashed Potatoes

This recipe from Penny Kovacs (@pennysprimal) is a great addition to any meal--particularly anything with sauce or gravy! Plus, it's gluten-free, dairy-free and meets the criteria for Whole30 and Paleo.

Ingredients
3-4 lbs. Russet potatoes (peeled and quartered)
½ cup Ghee
1 cup Almond milk (unsweetened)
½ cup Non-dairy sour cream
2 tsp. Salt
Directions
Boil potatoes until soft and then drain water.
Add ghee and almond milk.
With a hand mixer, beat until whipped and creamy.
Add sour cream and salt and beat again.
NOTE: You may need to add a little more milk and salt as preferred.
Serve and enjoy!
