Yellowfin Tuna Poke Bowl

Professional beach volleyball player Kelley Kolinske (@kelleykolinske) knows a thing or two about eating healthy. This tuna poke bowl is one of her favorite recipes and whether your eating to fuel elite level performance or just looking for something delicious, this recipe is sure to become one of your favorites too!

Ingredients

4 6oz. Yellowfin tuna steaks
4 cups cooked kale
1.5 Cups brown rice
4 Ripe avocados (halved and cut into strips)
10 Tbsp. crispy onions
2 Cups edamame
Seaweed salad
8 Tbsp. toasted sesame oil
8 Tbsp. soy sauce
4 cloves garlic (minced)
For The Marinade
Directions
Mix all the marinade ingredients together and then place the tuna steaks and marinade in an airtight reusable container or Ziploc bag and let marinate for about an hour.
Heat a skillet over medium-high heat with a small amount of olive oil and then sear tuna steaks for two minutes on each side.
Cut each tuna steak into 1/2inch strips.
Serve in a bowl with the rice, kale, avocado, crispy onions and kale.
