If you haven't noticed, when we talk about cooking proteins, we almost always talk about cooking to specific temperatures rather than time. Let's face it, 350 degrees isn't the same on all ovens and even things like altitude can make a huge difference. We use this thermometer in the Greensbury Test Kitchen and can't imagine cooking with out it. There's lots to love, but our favorite feature is the ability to set it to a specific temperature (say for example, 129 degrees for that perfect medium rare, organic grass-fed ribeye) and then the alarm will beep with the meat gets to temperature. No need to keep opening the oven door or look away from whatever else you're doing!
